  • 2 cups rolled Oats
  • 1 cup packed mashed ripe bananas, about 2 large bananas

Instructions:

Ingredients:

  • 2 cups whole wheat flour

  • 1 cup packed mashed ripe bananas, about 2-3 large bananas
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1/3 cup olive oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions:

  • Oven: Preheat to 350 degrees Fahrenheit. The muffin pan should be butter-greased or lined with liners and left aside.
  • The flour, oats, baking soda, cinnamon, and salt should all be combined in a big basin and left to sit for about 10 minutes. 
  • Beat the mashed bananas, eggs, honey, olive oil, milk, and vanilla in a separate big bowl. Add the dry ingredients and blend thoroughly. Avoid overmixing. If desired, you can now include nuts or chocolate chip cookies.
  • Fill each muffin cup with an equal amount of the mixture. Add cinnamon and rolled oats on top. A toothpick put into a muffin should come out clean after 20 to 25 minutes of baking.
